ROSÉ / ROSE
Paço dos Infantes rosé is produced from Touriga Nacional grapes harvested at Herdade da Lisboa. The harvest and selection of bunches is manual and the grapes are cooled in a cold room within 24 hours after harvest. Direct vacuum pressing with the whole grape (Blan de Noirs technique) and cold decanting for 48 hours. Fermentation in stainless steel vats at controlled temperature for 16 days, followed by a weekly bâtonnage process for two months. It has a pale salmon color and exuberant aroma of fresh fruit, blueberry and floral notes. The excellent acidity gives it a remarkable freshness. Good structure, wide and tasty.
Pairs with grilled fish, seafood, Asian food and Mediterranean-inspired salads.
